Like many of you, I have a deep appreciation for French gastronomy—its creativity, freshness, boldness, and the excellence of its ingredients and craftsmanship. The chefs who delight our eyes and taste buds with their daily creations often go uncelebrated. Behind the scenes, they constantly reinvent themselves, manage suppliers to find the best products, endure fatigue and tension, long hours, standing, and the pressure of maintaining consistent quality. Their passion drives them to keep going, day after day. For this, they deserve our thanks and recognition. Today's spotlight is on Le Bastion, a restaurant in the beautiful medieval town of Lagrasse, nestled in the bends of the Orbieu, one of our cherished rivers. The pictures speak for themselves!
